Bunny’s Red Rice

Ingredients

  • 2 Tablespoons vegetable oil

  • 1 medium yellow onion, chopped

  • 2 cups of water

  • 1 (8 oz) can of tomato sauce

  • 1 packet of Sweet n Low

  • 2 packets of Goya ham seasoning

  • 1 1/2 cups of converted rice

  • 1/2 link of smoked beef sausage

Variations:

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon ground thyme

  • 1/2 celery stock

  • 1/2 green bell pepper

  • 1 teaspoon cayenne pepper (add another if you like more heat)

Directions

  1. Heat the oven to 350 degrees. Chop the onion and and set aside.

  2. Put the oil in a heavy bottom, oven-safe pot and set the stove to medium-high. Add the onions (and other hard vegetables if you chose to add the “variations” to the pot and cook for 5 minutes, stirring occasionally.

  3. Add the water, tomato sauce, seasonings, and sweetener and bring the pot to a boil. Then add rice, stir, cover, and lower the heat to simmer and cook for 10 minutes. Remember to stir the rice occasionally.

  4. Uncover the rice, stir it, and put it in the oven with the lid off. Cook for 10 minutes.

  5. Cut up the sausage into 1/4 inch thick slices and set aside. Take the rice out of the oven, add the sausage to the rice, stir, and cook in the oven for another 10 minutes.

  6. Remove from the oven, fluff the rice, and its ready to serve.
